Vegetable curry - Lentil Curry

Indian Curry recipes collection are a must for any food lover as Indian Curries are popular world over. The variety of lentil curry and vegetable curry recipes is so vast. Hot curries, sweet curries, sour curries etc. Each region/state in India has it's special curry .

Whether for a family or for a party, curries are in demand. People love curries as what is a meal without a little color and spice added? It would be so boring.

Curries from Punjab are heavy with spice and are hot and more oily too. Gujarati curries are sweetish, Maharashtra's curries are balanced. That is, they have the hot, sweet, sour ingredients.

Kerala currys and some south indian curries contain coconut oil which give it a special flavor and taste. South indian curry is generally made using coconut paste or grated coconut.

Are all Indian curries very hot and spicy?

It is a misconception that Indian curries are very spicy. Everyone in India does not eat very spicy food.

So if you want to try a curry recipe but are afraid because it is supposed to be spicy, go ahead and try that recipe.

There are ways to make the curry less hot without losing the flavor and taste.

How to enjoy curry

Tips to Make curry just hot enough to suit your taste.

  1. If you are buying the ready masala(spice mixture) from the store, reduce the quantity of red or green chilly that is asked to be added in the recipe.
  2. If you are making your own masala (spice mix- it is really very easy to make your own masala), use less amount of spices which make the curry hot. Namely, cloves, black pepper, red chillies. Reduce the quantity but do not totally omit them as that would change the flavor and taste. Even if you reduce only red chilis or red chili powder, it will help a lot in reducing the hotness.
  3. If you would like to enjoy the hotness but are afraid of feeling the burning sensation later, there are ways to reduce the impact of chillies and spices. You can serve the curry along with Raita or a cup of curd(plain yogurt). That will reduce the severity of the curry.
  4. Drinking a little cold milk after a curry meal can reduce the burning sensation.

Some Curries are made commonly all over India. And there are also curries specific to a region. The ingredients differ according to different states.
