In general, I add one medium sized onion for 2-3 medium sized potatoes. You may try that next time.

You have not mentioned the quantity of potatoes and onions you used. So I am just guessing the quantities here.
If you want to repair the vegetable having too much onions, you can do the following things.
1. If you used boiled potatoes, boil 1-3 more potatoes and then mix well with your already cooked vegetable. Cook together for a minute or two. Add more spices and salt if needed.
2. If you cooked your potatoes by frying, sauteing, cook a few more potatoes separately and mix with your already cooked vegetable. Cook together for a minute or two. Add more spices and salt if needed.
3. Chop a few tomatoes, cook for 2-3 minutes in a pan. Add your cooked potato and onion vegetable mix and cook together for a minute on low flame. Add more spices and salt if needed.
4. You may chop and cook other vegetables such as cauliflower, green beans, carrots, green peas, cabbage etc. Add them to your cooked potato vegetable mix and cook together for a minute on low flame. Add more spices and salt if needed.
5. Cook some dal, tuvar or masoor, till just done. Mix with your cooked potato vegetable mix and cook together for a minute on low flame. Add more spices and salt if needed. You may add some garam masala to this.
