Avial or aviyal is a vegetable stew recipe from Kerala, a south Indian state.

This south Indian vegetable stew recipe is a healthy recipe.
As avial is made with a variety of vegetables, it has become popular in other states too.
Though we are listing many vegetables below, you may add 4-5 of your favorite vegetables.
How to make aviyal – avial - South Indian Vegetable Stew
Ingredients for serving 3-4
VegetablesCarrots - 100 gm
Beans - 100 gm
Pumpkin - 100 gm
Bitter guard -1 small piece
Yellow cucumber - 100 gms
Drumstick - 100 gms
Ash gourd - 100 gms
Yam - 100 gms
Tapioca - 100 gms
Other ingredientsHalf coconut grated (about 1 1/2 cups grated)
Green chilies - 4 or 5 or according to taste.
Ginger - a small piece
Cumin seeds - 1/2 tsp
Shallots - 1 5 nos
Curry leaves- 1 bunch
Turmeric powder- half teaspoon
Chili powder - 1 tsp, more or less according to taste
Curd - 4 tbsp
Coconut oil - 2 tbsp
salt - 1 tsp, more or less according to taste.
Preparation before cooking avial
Cut all these vegetables lengthwise thinly and keep aside.
Grind the grated coconut and finally add shallots, green chilies, and cumin seeds and curry leaves.
Making avial - aviyal
In a pan/kadai/cooker put all the cut vegetables with turmeric and chili powder.
When the vegetables are half cooked, add the coconut, shallot mixture. Mix into the vegetables.
Cook on low heat for 5 minutes and then add curd.
Cook for 2 minutes then switch off the flame.
Add coconut oil and curry leaves. Stir well.

This yummy aviyal can be served with rice, chapattis or any other flat bread.
