Baigan Bharva - Stuffed Brinjal Curry Recipe

Bharva baigan or the stuffed brinjals is a vegetable curry recipe.
Baigan or brinjal is also known as eggplant or aubergine.
This bharva baigan(Hindi)is known as tumbida badnekai in Kannada, Bharli vangi in Marathi.
This stuffed brinjal curry goes well with all flat breads such as chapati, jowar roti, paratha etc.
How to make bharvan baigan or stuffed brinjal curry
List of ingredients and the quantity
5 small brinjals,
3 capsicums (optional),
1/2cup fried groundnuts ,
4green chillies
1 pod garlic,
1/4 tsp coriander seeds
1/2 tsp sesame seeds,
2 onions cut slice,
1 tomato,
turmeric,
corinder leaves
salt to taste and
little jaggery.
Preparation to do before cooking
Fry coriander seeds, onions, garlic, sesame groundnuts , green chillies and then make a fine paste. Do not add too much water.
Step by step cooking instructions
Cut brinjals and capsicums lengthwise without removing the stem.
Fill the ground paste in the brinjals and capsicums retaining a little paste aside for the the masala.
Put in oil, then put rai and jeera when it crackles add curry leaves.
Put in the stuffed brinjals and capsicums in the cookers one by one.
Let it fry for a moment then put the left over masala, salt to taste, little turmeric powder and little jaggery.
Add the tomato, coriander leaves.
Presure cook up to 2 whistles.
Bharva baigain is ready to serve.
Serving suggestions
Serve it for lunch or dinner with the flat bread of your choice.
