This dry cauliflower subzi or gobi subji is a good accompaniment to chapati, rice, roti, naan etc.
Good to take it for lunch to office or school. You can make it as spicy or mild as you like.

Step by step instructions for making dry cauliflower subji - gobi subzi
1. Heat oil in a kadai/pan. When oil is hot, add rai/mustard seeds and jeera/cumin seeds. Let them splutter. Then add hing/asafotida.
2. Add the cleaned cauliflower. Add haldi/turmeric powder.
3. Add red chili powder, salt, sugar(if adding), garam masala powder. Add 1 tbsp water. Mix well. Cover and cook for 5 minutes on low flame. Stir once in between.
4. Press a floret with a spoon or spatula to check if cauliflower is done, if it is soft enough to your liking. If it is not soft enough, and all the water has evaporated, add a small spoonful of water, cover and cook again for a few minutes.
When it is cooked soft enough to your liking, add chopped dhania/cilantro/coriander leaves. Mix well. Keep covered till serving time.
Dry gobi / cauliflower subzi in ready to serve.
