How to make mango pickle soft

My mango pickles in the jaar are very hard to eat.

Even after keeping the jaar under sun does not show any positive result.

My jaar also contains too much oil then how to make them soft?

Answer:

Your mango pickle may be hard because of too much oil added and too early.

If you like your pickle soft, do not add oil immediately after making the mango pickle.

Add only salt and turmeric as required and keep aside for 2-3 days.

This will help the mango to release some juice and absorb salt and become soft.

Add other spices and mix well with a dry spoon. Keep for a week and shake the pickle jar once everyday.

After pickle has absorbed the flavors of the spices and released some sourness in the juice, add the oil, make the tempering and mustard seeds, hing etc.


Shake the jar/ stir the pickle for a month with a dry spoon.

i want to know the ways to soften lemon pickle

I dried the lemons too much in the sun for 8 days without the spices and oil ,sugar etc. Then with it. Now the pieces cant be chewed at all.Can anything be done now?

How to soft pickle

I had mixed my pickle in the liquid sol instead of dry,n it is now very hard. How to soften it now?

Hi Poonam,

Usually pickle becomes soft within the first week or two when it is mixed with salt.

As your pickle is already two months old, try the following things.

If you have kept the pickle in the fridge, remove and keep at room temperature.

If there is too much oil, remove the excess oil in a bottle. Extra oil layer works to preserve the pickle. You can add this oil back to pickle later.

Check salt, add some more if needed. Stir the mango pieces everyday with a dry spoon. Keep the bottle on the kitchen counter so that you will not forget to stir. Do this for about 10 days.

Your mango pieces will become soft during this time. Once they are soft, you may add back the extra oil you removed in the bottle.

If the above method does not work in 10-12 days, you may try the next steps.

These steps will definitely make pickle soft but will keep pickle for a short time. So take only small quantity at a time. You should finish the pickle within a week or keep it in the fridge if you want to keep it longer.

Try this first with a cupful of pickle and see if you like it.

Heat a pan on low flame.

Add a cupful of pickle to the kadai(pan). Cover and cook for 3-5 minutes (not longer). This will soften the pieces.

Remove the lid and cool completely before bottling again. Consume this within 3-4 days or keep in fridge and consume within 15 days.

If you have already made large quantity, make this only a cupful at a time.
