Lauki Ghiya Bottlegourd Tomato Chutney Recipe

This bottlegourd tomato chutney recipe is easy to make chutney.
In some of the Indian languages, bottle gourd is known as lauki/ dudhi/ ghiya(Hindi), doodhi bhopla(marathi), sorekai (Kannada), sorakaya(Telgu).
Bottle gourd is also known as calabash, opo squash, long melon around the world.
Lauki or doodhi is a commonly available vegetable. It is healthy.
How to make Lauki - Ghiya - Bottle gourd tomato chutney
Ingredients for lauki/doodhi tomato chutney
bottlegourd - 100grms
tomato - 1 big size
onion - 1 medium size
urad dal(split white lentil) - 1 tsp
jeera(cumin seeds) - 3/4 tsp
green chilli- 6 to 8
oil - 2 tsp
salt - 1 tsp or according to taste.
tamarind - lime size ball.
Ingredients for talimpu - tempering
musturd seeds - 1/2 tsp
cumin seeds - 1/2 tsp
red chilli- 2
curry leaves- 2
Making lauki tomato chutney
First cut the outer part of bottlegourd and cut into slices. keep it aside.
Cut tomato and onion into slices.
Switch on the stove. Then take a kadai(fry pan) add oil.
Then add urad dal and jeera.
Fry for 5 sec then first add green chillies,onion and fry for 2min.
Then add bottlegourd slices. Fry for 5 minutes.
Next add tomato and fry for 3 min in medium flame only.
Keep the kadai aside cool the mix.
Making tempering - talimpu
On the same flame, heat a small pan. Add 1 tsp oil.
Add mustard seeds,cumin seeds,red chillies and then curry leaves and fry for 5 sec.
switch of the flame. Keep it aside.
Now grind the cooled bottlegourd mixture with adding salt and tamarind.
Take that bottle gourd and tomato paste into a bowl.
Add talimpu and mix well.
Serving bottle gourd tomato chutney
Serve chutney with dosas, idly and also with plain rice.
