Stainless steel cookware is one of the healthy cookware choices. There are many advantages of using stainless steel cookware.
Stainless steel is non reactive to most ingredients. You may cook tomatoes in it and leave food in the stainless steel vessel for long.
It is lightweight.
It is strong and can handle the wear and tear easily. The stainless steel pots and pans can be used for many years.
It is easy to clean.
It does not stain easily.
Stainless steel is scratch resistant.
It does not need any pre seasoning the way iron cookware needs.
It takes a bit longer to heat, compared to aluminum. You may use sandwich bottom stainless steel cookware to overcome this problem.
If the bottom is not thick, food may stick to the bottom. You may need to turn the food frequently. Or you may use a generous coating of oil/fat at the bottom of the cookware.
Now a days you get sandwich bottom stainless steel cookware which can be used on gas stove as well as induction stove. I use such stainless steel cookware in my kitchen.
You may use metal/stainless steel spoon/spatula to turn or stir food.
You may use wooden or silicon spatula to avoid getting any marks.
Wash with normal soap and water.
If food is sticking to the bottom of the cookware, pour some warm water and leave aside for some time. If necessary, leave it overnight. After that, wash as you normally would.
Stainless steel pots and pans may get some color spots if they are overheated / left empty on the flame. These spots do not affect the cooking in any way.
Aluminum cookware is is now considered unhealthy though these were being used for a long time as a cooking vessels. It can leach in foods, especially when you cook acidic foods in it. It is considered toxic and may lead to some serious health problems.
Nonstick cookware is convenient to use and clean but also considered not so healthy as the teflon coating gets damaged over time. Overheating and the peeling of the coating of the pot/pan releases the poisionous substance in the foods being cooked in it.
Iron or cast iron cookware is healthy for cooking but maintenance is difficult. As iron reacts to acidic/ sour foods, such as tomatoes, cooked in it, you need to remove the cooked food immediately to another vessel. You can not leave the the cooked food in the iron vessel.
