Ingredients for Sweet potato dessert - Ratalu ka meetha for 2 servings
Sweet potato - Ratalu
jaggery - gud
ghee
grated coconut
- Sweet potato / Ratalu / Genasu | रताळी - 2 medium
- Ghee - 1 tbsp
- Jaggery/Gud - 2 tbsp, more or less according to taste
- Cardamom powder - 1/4 tsp
- Coconut grated, fresh or dry - 1 tbsp or more

Water - 1 tbsp
- Wash sweet potato well. You may peel it if you wish. I do not peel it.
- Slice sweet potato in rounds or any other shape you like. Cut the pieces thin.
- Add ghee to a pan. Add the cut slices to ghee and mix well to coat the pieces well with ghee.
- When they are coated well with ghee, add jaggery and water. mix well. cover and cook for 2 -3 minutes.
- Ratalu cooks fast. Add another spoonful of water if needed to cook them soft to your liking.
- Add coconut and cardamom powder and mix well.
- Serve hot or at room temperature or cold. You may serve it by itself or with a little fresh cream over it.
This sweet ratalu may be served hot, at room temperature or cold, after keeping in the fridge.
If serving cold, top with a spoonful of cold fresh cream, homemade or store bought. Tastes great.
Tips and variations
Add sugar instead of jaggery if you wish. You may also use honey or maple syrup instead of jaggery or sugar.
Instead of cardamom powder, you may use vanilla extract.
