Tamarind rice - Puliogare masala powder with step by step written instructions and a video.
Puliogare/tamarind rice is a South Indian rice variety. It is also known s Pulihora, Pulisoru, Pulinchoru, Puliyodarai etc. It is made
during festivals as well as at other times. Picnics, party, get together
and at temple prasad for distribution to devotees.
A special spice powder or a spice paste is used for tamarind rice. Here we are making the spice powder.
This spice powder, once made, is good to use for 2-3 months. So make this masala powder for tamarind rice and enjoy.
How to make tamarind rice masala powder
Ingredients for puliogare masala powder

Dry red chilis- byadgi for color and guntur for hotness
- coriander seeds/dhaniya - 3 tsp
- cumin seeds/jeera - 1 tsp
- black pepper/kali mirch - 1 tsp
- dry red chilis/ sukhi mirchi -8-10
- chana dal - 2 tbsp
- urad dal - 1 tbsp
- methi/fenugreek seeds - 1/4 tsp
- sesame seeds/til - 2 tbsp
- copra/ sukha narial- grated - 2 tbsp
- curry leaves - 8-10
Step by step instructions for puliogare masala powder
Roast everything on low flame. Do not let it burn. Take out on a plate together after roasting and let cool completing.
- Add chana dal and urad dal in a pan and roast till it slightly changes color.
- Remove on a plate to cool.
- Next add coriander seeds, cumin seeds and black pepper seeds to the pan and roast.
- Take out on the same plate.
- Next add methi(fenugreek) seeds and roast till it changes to light pink.
After that roast til/sesame seeds. Roast till sesame seeds starting popping.
Add grated dry coconut and dry curry leaves and roast for a minute stirring continuously.
Add a little oil. Add guntur chili(these are hot in taste), byadgi chili(for bright red color) to the pan. Roast till crisp.
- You can see all the roasted ingredients cooling on the plate.
- Add hing/asafoetida.
- After the roasted ingredients are completely cool, add everything to the blender jar.
- Grind to fine powder as shown in the image below.
Store in airtight container and use for 2-3 months.
