How to make whole moong sundal / Mung bean sundal / Mugachi usal, With step by step written instructions.
This sundal/usal is made with a quick cooking method. This is unsprouted whole moong recipe. Sprouting takes time. So I use this method when I want to cook whole moong gugri fast.
Sundal / gugri is usually made during Navaratri/ Dasara festival. It is also made during other festivals to offer to the deity as naivedya and to distribute as Prasad. You can make this when you do not have any vegetables to cook as a side dish.
Tempering ingredients
Step 1
Take whole moong and peanuts in a bowl and wash 2-3 times.
Add 1 cup water and cook in pressure cooker for one whistle.
When cooker cools down naturally, we have boiled whole moong ready to make sundal/ gugri/ usal.
Step 2
Heat oil in a pan or kadai. Add mustard and cumin seeds.
When the seeds stop spluttering, add chilis and urad dal. Saute till the urad dal turns slightly brown.
Step 3
To the cooked moong bean and peanut bowl, add fresh coconut, salt and jaggery powder.
Step 4
Add the cooked moong bean mixture to the tempering in the pan.
Add one or two tablespoons of water in the mixture if it looks too dry. Mix well.
Step 5
Cover and cook the mixture for 5 minutes. Stir once in between.
Step 6
After 5 minutes, our whole moong gugri sundal usal is ready. Keep it covered till serving time.
You may serve this hot or at room temperature. This keeps well in the fridge for 4-5 days. So you may make this in advance and serve when you want.
This also freezes well and just thaw and reheat before serving.
